Pan-Seared Pork Chop with Tank 7 Beer Blanc
Finished with chives
Serves 4

Ingredients

For the pork chops

• 4 bone-in pork chops (about 1–1 1/2 inches thick)
• 1 tablespoon neutral oil
• 1 teaspoon kosher salt
• 1/2 teaspoon black pepper


For the Tank 7 beer blanc

• 1 shallot, finely minced
• 10 oz Boulevard Brewing Company Tank 7 Saison
• 1 tablespoon malt vinegar
• 8 tablespoons cold unsalted butter, cubed
• 1 tablespoon fresh chives, finely chopped
• 1/2 teaspoon kosher salt
• 1/4 teaspoon black pepper
 

Method

1) Cook the pork chops

Preheat oven to 400°F.

Pat the pork chops dry and season both sides with salt and pepper.

Heat a large oven-safe skillet over medium-high heat and add the oil.

Sear the pork chops for 2–3 minutes per side until deeply golden.

Transfer the skillet to the oven and cook until the internal temperature reaches 145°F, about 5–8 minutes depending on thickness.

Remove and let rest while you make the sauce.

 

2) Make the beer blanc

In a small saucepan over medium heat, add:

• minced shallot
• Tank 7
• malt vinegar
Bring to a simmer and reduce until about 2–3 tablespoons of liquid remain.

Lower the heat to very low.

Whisk in the cold butter one cube at a time, allowing each piece to emulsify before adding the next.

Do not let the sauce boil once the butter goes in.

Finish with:

• chives
• salt
• pepper

The sauce should be glossy and spoon-coating.

 

3) Serve

Spoon the Tank 7 beer blanc over the rested pork chops and serve immediately.
